- Onions: 1 grain (large size / finely chopped)
- zucchini: 2 tablets (cut into small squares)
- carrots: 2 tablets (cut into squares)
- mushrooms: half a cup (sliced)
- lemon juice: 3 tablespoons
- peas : Half a cup
- oats: 3 tablespoons
- warm water: 4 cups
- salt: one teaspoon
- cumin: half a teaspoon
- turmeric: half a teaspoon
- olive oil: 2 tbsp
- parsley: cup (finely chopped)
How to prepare
- Put the chopped onions in a bowl over the fire with a little olive oil and stir constantly over a low heat until the onions become golden light, and it is preferable to maintain a quiet fire when using olive oil in cooking, to avoid losing its nutrients.
- Add chopped carrots to the onions, stirring for 2 minutes, until ingredients are smooth together.
- Cover the bowl until the carrots slightly wither.
- Add the peas while stirring, then add the zucchini and mushrooms gradually to give each of them time to ripen.
- Cover the bowl until the vegetables are tender.
- Add spices and seasoning, stirring, to avoid mashing vegetables.
- Put the oats with warm water over a low heat, stirring until completely dissolved, then add it to the vegetable mixture and leave it with good and quiet stirring until it boils, to avoid the formation of clumps.
- Put the soup in the serving dish after it becomes medium density, then sprinkle the chopped parsley on the face and add lemon juice to it.
- Serve hot soup with brown toast or bran bread for a full nutritional meal.
